3 in 30

Well we are 10 days into the month, and I feel like I have been very productive!  However, I haven't really been productive with my goals.  I keep finding other things to distract me. These are the goals that I set for the month. 
3in30 Challenge

  1. Change banks and start using YNAB.
  2. Continue on my cookbook project.
  3. Choose a college, degree, and get started on that process.
I have made great progress with my first goal, but I really have to get to work on my other two.  As for my first goal, I have got everything switched to my new bank except a few dollars that I have left in my checking account.  YNAB is working great so far.  It is even better than I remember from when we used it a few years back. Now, I just have to be disciplined enough to use it! 

As for my other two goals, I haven't made any progress.  :( 

But no worries!  It is just the 10th!  I will get them done!  Hope everyone else is making great progress!

I am back!!!

Wow, it feels like it has been forever since I have blogged, but I have been so busy.  However, I am back now! Just to catch everyone up to speed here is whats been happening:

  • My wonderful husband came home from Afghanistan.
  • The Wilson's came to Florida to visit.
  • The Warren's came to Florida to visit.
  • The Evan's came to Florida to visit.
  • We prepared/packed everything.
  • We moved to Kentucky.
  • We unpacked everything.
So all of those combined with me being lazy and trying to make the most of all my time in Florida has led to my absence in the blog world!  :)

Tim returns to work on Monday, so things should get back to normal.  I wish we didn't have to work so we could just continue hanging out all day everyday!  But neither of us have any rich uncles, so I am sure we are going to have to continue to work. 

I am a few days late, but I am going to try to get in some 3 in 30 goals for this month!  But I am going to try to keep it simple because it is summer, and I want to make the most of it.  So here are my goals:



  1. Change banks and start using YNAB.
  2. Continue on my cookbook project. 
  3. Choose a college, degree, and get started on that process.
So these aren't too major.  The first one is a goal out of necessity.  I don't like the bank I am with now at all.  So I am changing.  It is just a lot of work to get all your information changed over.  Also, there is a great program called YNAB (You Need A Budget) that I want to start using again.  I am pretty tight with money, but I think this program is going to help my husband be tight with money too!  :)  Just kidding Honey.  It is just a great program that helps you realize how much money you actually spend on the useless stuff.  It kind of take the envelope method and turns it digital!  I am excited to get it started!

A couple months ago one of my 3 in 30 goals was to make a cookbook for my grandma.  I did not get that accomplished, but I did realize how big of a task it was going to be.  So this month I just want to continue working on it.  Since her birthday, anniversary, and mother's day has already passed, this is probably going to be a Christmas gift, so I have plenty of time.  I would like to get at least 20 recipes added and 10 pictures!  So we will see how that will go. 

My final goal is way out there, but I guess it is the right time.  I need to get a Masters Degree!  I don't have a clue what I am going to do it in, but now is the time.  I have my husbands GI Bill, and I am home all the time.  So I am going to try to find an online program that I think I can do!  I would like to start school by July, so I need to make some decisions now!

Everyday Blessings

So I asked my wonderful husband what I should write about today, and he is hilarious!

I am so glad he is back home with his corny jokes!!! 

It really is wonderful having my whole family back together.  Yesterday the kids wrestled in the floor and laughed about who was the toughest!  It was adorable.   Taylor would tickle him until he was begging her to stop, but the second she let go, he was right back for some more! It has been busy around here, but it is always good to pause a moment and remember how blessed we are. 
Our new home in Pikeville has a dinning room, which means we needed a bigger dinning room table.  The one we had was a good starter table, but now it is time to move up to the grown up table! So after lots of shopping, we finally found a table we LOVE!  It is a dark mango wood table with cushiony seats!  Thanks to Mr. Ferris Brown, we were able to save the $114 delivery fee.  (Note the furniture store is less than 10 miles away! What a rip off!)  Another blessing, Good Friends!  In addition to delivering our table, his wife cooked us a FABULOUS meal last night, with the best pecan pie I have ever tasted!!!

Finally Home

I am so happy to have my husband home!  After two weeks of traveling, we are finally all back home!  The ADT II Welcome Home Ceremony was moving! Tons of teary eyes and big smiles! Thank God for bringing all the soldiers home safely.




After the welcome home ceremony, we all headed out to Pikeville, KY and found a pretty place to move too.  I am really sad about only having a couple more weeks here in Paradise.  Thankfully, we are going to have lots of friends and family here with us, so I am sure we will make the most of the remaining time here!  However, mixed in with all the fun, we do have to get some work done.  Busy, Busy, Busy!

In my life this week...

I have been so lazy this week.  I haven't worked out everyday like I should have, but I did work out some.  My diet has totally stunk this week too! :(  I will be traveling the next couple weeks so I am going to try to be good, but I am sure it is going to be hard. 


In our homeschool this week...

We are almost finished right now, so our homeschool is boring.  Taylor is still working on her leadership class.  We are taking a break, with the exception of the class, until probably July.


Places we're going and people we're seeing...

We are boring people, so we haven't been anywhere!  However we are about to do some traveling for a couple of weeks so we are very excited about that! 


My favorite thing this week was...

We had a fantastic morning at the beach this week.  We went out early one morning and just relaxed.  After that we walked to a restaurant and had a great unhealthy lunch!  I am going to miss the beach so much after we move. 

What's working/not working for us...

The schedule I had isn't working for us.  I am sad about that too, but with the break in school and traveling I am okay with it.  In a few weeks I will reevaluate it!


Homeschool questions/thoughts I have...

I love homeschool! If Taylor was in public school, we would be missing out so much on important family things.  I am glad that in the middle of April I can just go off to Kentucky for a couple weeks, and I don't have to worry about her missing out on school work.

I am traveling to see the family in a few days.  I miss my parents, grandparents, sisters, aunts, in-laws, and everyone! 


I am going house hunting next week.  Does anyone know where I can find a house like this (or any house) for rent in Pikeville, KY?  I prefer a house like this!

Now if I could just calm down enough to enjoy it all!  LOL.  I have to get my bags packed and I am ready to hit the road!  Well, my bags packed plus about a million other things!  I am going to get started....umm.... tomorrow!  Good night!

3 in 30 Goal 2

I do believe that I have finally found a program to use to make my cookbook!  I haven't done too much work on it yet, but I think it is exactly what I was looking for.  I can add pictures, sections, table of contents, and it is reasonably priced.  What I think I like the best is so far it seems really easy to use.  Each page uses the same template and I like when things look uniform!

D.C. Vacation

I received a message today from one of my dearest friends telling me how much she missed me.  I never talk to her anymore, but I know that when I see her again it is going to be so great!  We were college roommates,   and after graduation she moved back home to Washington D.C.  I have seen her once in the last four years. 

So with that being said, I am officially starting plans for a trip to go visit her!  (I hope that's okay honey!)  I have been to D.C. a few times.  Once was a great trip sponsored by South KY Rural Electric where I was able to see tons of places.  All my other trips to D.C. were with the roommates; so they were filled with shopping, family, and fun!  So my goal this time is to see all the girls that I miss so much, eat a lot of great Ethiopian food, and revisit some of the great historical aspects that D.C. offers. 

I for see two problems with this trip.  One is talking my husband into a vacation that does NOT involve the beach!  We do really love the relaxing nature that a beach vacation offers, and a trip to D.C. will be a much busier vacation. 

The other problem is where to begin on the list of things to do.  Tim and the kids have never been to D.C. so there are so many things that they have to see.  We have to see the Capital, The White House, The Smithsonian, The Holocaust Museum, The Washington Monument, The Lincoln Memorial, The Vietnam Memorial, The Korean War Memorial, The JFK Memorial, the Library of Congress, the National Cathedral, and the list goes on and on.   Seriously, I can think of so many more places that I want to go.  I want to go to The Tomb of the Unknown Soldiers, Arlington National Cemetery, Ford Theater, and are you catching on to where the problem is!  There is so much to do and so little time to do it all! 

In addition to seeing all the awesome things that D.C. offers, I really want to see EVERY person in these pictures!  All these people mean so much to me!  So I think my vacation is going to have to be like a couple months long!  :)  I wonder if the Army will let Tim off work for that long! 



Any suggestions on how to pack all of this stuff into a normal 4 or 5 day vacation?

Crappy Days

Crappy days were invented to make us appreciated the good things in life. 

Today was one of those crappy days, but I guess it is necessary to have it because I know there is about to be a lot of good days coming!  I get to see my husband soon!  I know I have said it over and over, but I can't wait until my honey gets home!  Being apart has been so much harder than I ever thought. 


I really shouldn't complain because I do have so much to be thankful for.  I have a family that loves me, lots of friends, food to eat, a beautiful home to live in, a God that loves me, and everything else that I could want.  Lots of people are not that lucky.  Here is hoping that tomorrow goes better!

The Homeschool Mother's Journal 3

In my life this week…

This has been a great week.  I got some of the bags packed for my trip to Kentucky.  I can't wait until my family gets to be all together again. 


In our homeschool this week…

Algebra 1 is finally over with a 94% final grade!  One class left and then a much needed summer break!!! 


Places we’re going and people we’re seeing…

We went to Wal-Mart several times this week.  Does that count?  With the big trip coming up we haven't had much desire to go anywhere.  However, we did have a great afternoon at the beach!

The afternoon at the beach was fabulous! I love the beach!


What’s working/not working for us…

Getting the new computer has helped us out a lot.  Thanks honey for sending it to me!  You are the greatest. 


Homeschool questions/thoughts I have…

We are debating on the idea of summer classes.  I want her to have a summer break, but I don't want her to loose any of the great study habits that we have worked so hard to get implemented.

April is going good so far.  I totally knocked out my first goal.  Like I did my first goal so well that I should get some extra credit! =)

My cookbook project is a little rocky!  I have started typing all the recipes up, but I am having a hard time finding a program to use.  I also wanted to make it very personal, so I am having a hard time finding those sweet personal touches! 

Goal number 3 will probably turn into a May goal.  I keep searching online.  I have even looked at surrounding towns, but still no luck.  Also I think my husbands return home date has changed, so I don't think I will actually be in town until May. 

I hope everyone is getting all their goals taken care of!  I know it feels so great to get things crossed off the list!  Good luck everyone!

Where I've Been, Where I am, Where I'm going...

Tonight I was given a piece of paper with three columns addressing the past, present, and future.  Each section asked about where my focus is, marker events, spiritual success, failures, views of God, key relationships, and authorities.  The paper was just for me.  I didn't have to do it, and no one is grading it.  But if definitely makes you think. 

Where I've Been, Where I am, Where I'm going...

These are pretty simple questions, but for some reason I couldn't come up with answers to them. 

I have always believed that you can't know where you are going if you don't know where you have been.  (I was a history major for those who can't seem to remember that.)  I also am a firm believer that you can't just follow your heart, you must guide your heart.

I have done lots of things in my 26 years!  Some were good choices and others were bad, but I am who I am today because of all the choices I have made and the situations that I have been in.  When looking at my past, I have had a lot of the milestones:  Graduating High School and College, Getting Married, Becoming a Christian, and other things. 

My life right now isn't how I pictured it being, but I sure do love it!  I love my husband and kids.  I love being a housewife.  I love homeschooling Taylor.  I love all of it, but trust me, it is so different than how I pictured it.  That is why it is so hard to answer where I am going.  All I know is that there will be bumps in the road.

The D-Word

Workout:
I am still working out!  I know, I am surprised too!  I finished Week 3 of C25K today.  So I am scared of tomorrow's workout.  I don't think I am ready for it. 

Week 4 Day 1
Brisk 5 minute warm up walk, then:
-Jog 3 minutes
-Walk 90 seconds
-Jog 5 minutes
-Walk 2-1/2 minutes
-Jog 3 minutes
-Walk 90 seconds
-Jog 5 minutes
5 minute cool down walk.

I really don't think I am ready for that much jogging, but we will see what happens!  I wish there was some way to be healthy and skinny and not have to work for it at all!  I guess I will have to keep dreaming!

I am going to really start the d-word tomorrow!  I know this is just an excuse, but it is hard to diet with a teenager in the house who is constantly hungry!  I wish I had he metabolism.  I have been blessed with many things throughout my life, but a good metabolism has never been on that list!  I am not very good with diet food, but I think some salads and baked chicken are going to be menu!

Relaxing at the Beach



I love days like today!  After I crossed several things off my to-do list, Taylor and I walked down to the beach and did NOTHING!  I sat in the sand, listened to some music, read a little, texted some.  Essentially I did whatever I wanted.  Taylor, who gets bored more easily than me, made this beautiful masterpiece in the sand for me!

Tomorrow is going to hurt!

Today I worked out, and tomorrow it is going to hurt! I completed Week 3 Day 1 of C25K. After my workout and shower I got the ridiculous idea to walk to David's Snoballs. I haven't had a butterscotch snoball in so long! So I walked a round trip of almost two miles to get my snoball! I can already tell that I am going to be in pain tomorrow. Hopefully in the long run it will all be worth it. I have lost about 5 pounds so far. I just have a bunch more to go!

The Homeschool Mother's Journal 2

In my life this week…
I have been busy this week.  I finished a big project I was working on.  It messed up our schedule some, but it was great getting that checked off my to do list! 

In our homeschool this week…
We are almost finished with Algebra.  I thought we were going to finish today, but I guess we will finish Monday.  Also Taylor got her final grade in History this week! Another A!  If she keeps up the great work she will finish with a 4.0 g.p.a. 


Places we’re going and people we’re seeing…
We went to the beach twice this week.  It is always a great way to start the day.   We also went to visit Carla today.  I love visiting with older people.  They have so much they can teach us! 


My favorite thing this week was…
running through the waves like a 4 year old! 


What’s working/not working for us…
There are still a few problems with our schedule.  With all the upcoming changes that are about to happen, it isn't really a top priority to me right now.  So overall, everything is going good!

I am so glad that we are able to homeschool Taylor.  She is definitely learning so much more than she did with public school.

Beach Therapy

I LOVE the beach.  I love the sound of the waves.  I love the taste of salt in the air.  I love the wind in my face.  Most importantly, I love how all my cares and worries just seem to disappear when my toes are in the sand. 

The beach is full of great memories.  I married my husband barefoot in the sand.  I have had several great vacations with all the people I love at the beach.  It is going to be really sad leaving this place, but I am sure I will find my way back to the beach before too long.

Chocolate Chess Pie

When I was a little girl, my mama and I would cook all the time.  We primarily made the sweet stuff, but she taught me a little about cooking everything.  I LOVE baking, but brownies love my hips so I try not to bake too often.  I was asked tonight to make a chocolate pie for the upcoming game night, and I would love to make it, but I would love to fit into my jeans even more!  However, I have decided that I would share my recipe with everyone so that way someone can enjoy the pie!  I have never found anyone that doesn't love this simple pie.  It is one of my most requested desserts. 

Chocolate Chess Pie
1  1/2 cup sugar
3 tbsp cocoa
2 eggs
5 ounces evaporated milk
1/4 cup melted butter
1 tsp vanilla

All you do is combine the sugar and cocoa in a separate bowl.   Then beat the two eggs and gradually add the cocoa sugar mix.  Then add all the remaining ingredients.  Pour into a pie pan and bake at 350 degrees for about 45 minutes. 

Most people like a little cool whip on top of the pie, but what really makes it GREAT is fresh sliced strawberries on the side!!!

Update

Family:
My husband's unit will return in just a few more days!!!!!!! A year is way too long. I can't wait until he gets home so we can start living a normal life. The kids and I miss him so much! 

Goals:
I have been a busy woman these last few days.   I completed my first goal in the 3 in 30 challenge.  I feel like I have worked morning to night on organizing all my pictures, but I am so happy to say that all my pictures (printed and digital) are now wrote on, organized, and put away.  In working so hard on this project, my schedule has suffered some.  I plan on getting caught up tomorrow on all the cleaning that I have slacked on.



Workout:
I am still working out at 8 a.m. every morning.  It is still torcher!  LOL.  I completed Week 2 Day 2 of the C25K today.  I think tomorrow I am going to run in the neighborhood and see if that brings some more excitement to it.  I have been looking for another type of workout that I can do at home, but I just really can't picture myself standing in front of a TV doing some kind of dance routine.   Taylor would make fun of me way too much! I haven't been dieting any.  I have tried to be more cautious on what I am cooking, but definitely not dieting, yet. 

Homeschool:
Taylor only has two classes left.  Her teacher finally graded all of her work in history and she received a 94 for her final grade.  GO TAYLOR!  We should be able to finish Algebra by Tuesday of next week.

My mother is such a wonderful woman.  She has always done everything possible to make our family happy!  She and my step-dad have raised us three kids, and all of us turned out okay!  She found ways to trust us enough to have our freedom, but kept a close enough eye on us that we didn't make any life changing mistakes.  It is sad the children in the world today that don't have good parents that constantly show them love.  I have truly been blessed with a great family!  I am very proud to be my Mother's Daughter

What a Day

Wow, What a Day!  I woke up this morning and finished week one of C25K.  I have worked out 5 days in a row!!!!  I know it may not sound like much, but it is major for me.   Next week with C25K I run 90 seconds and walk 2 minutes for a total of 30 minutes.  I have watched Netflix the last couple days while working out, and that has definitely made the time go by faster. 

After my workout I started on my first goal for the month, and finally finished for the day at 8:30 p.m.  Yep, thats right, I worked for almost 12 hours sorting through pictures.  Good thing I didn't have anything better to do today!  I sorted through all the printed off pictures that I didn't have in albums.  Every picture is not wrote on with the location, date, and names.  On top of that, all picturs are organized according to event or time period!  So I am officially half way done with my first goal from the 3 in 30 challenge.

My next step is to attack all my digital pictures.  I want to take all my old picture disc and get them uploaded and organized!  Wish me luck!  Some might call me pathetic for spending the whole day cleaning, but I feel very accomplished.  I love getting things done.  Hope everyone else got something accomplished today too!

3 in 30 April

The 3 in 30 Challenge is something that I have came across that seems GREAT! So this will be my first month trying it and I am super excited at the idea of getting some big task crossed off of my to-do list.

The mission of the 3 in 30 challenge is "Encouraging and Challenging each other to accomplish goals in 2011."

The first goal on my list is to get all my pictures organized. During my spring cleaning I have come across lots of old picture disc that I need to upload. In addition to that I want to try to get all the pictures that I have printed off labeled and organized. If you guys could see the boxes of pictures that need to be wrote on you would understand how large of a task this is going to be!

The next thing that I want to cross off my to-do list is my cook book project. I have had this idea about making a cookbook for my mama for a couple YEARS now. I just know she would love it if I ever actually did it!

The final goal for April is to find a house. We are relocating to the Pikeville, KY area and we have to find a house. Even though my other two goals seem like major task, I fear that house hunting is going to be the hardest. We have been looking for a while online, and we still have not found a single house for rent.

If I am going to get all these accomplished I should probably start now, so wish me luck everyone!

Homeschool Mother's Journal

In my life this week...
This week started our new schedule. Taylor and I have both got a lot of things done in school and home. Neither of us like getting up earlier, but it allows us to not be so rushed so we will get used to it!
In our homeschool this week...
Algebra has been great this week! She has caught on to radicals very quickly. Leadership is taking a long time to get all of her service hours in, and I am still debating on whether she is going to do the second semester or not.
Places we're going and people we're seeing...
We had a great afternoon at the Frank Brown Park. Taylor swam until she was worn out, and I just relaxed in one of the lounge chairs. Other than that, we haven't been anywhere out of the ordinary.
My favorite thing this week was...
Spring Cleaning! I love getting organized and going through old things! Found some of my husbands old pictures and videos. Those brought me some good laughs!
What's working/not working for us...
Everything seems to be working for us right now! Hope I am not jinxing us. There are still some adjustments that need to be made to the schedule, but so many things are about to change in our lives that I am not too worried about them right now.

Workout Day 3

For anyone who is curious, I worked out again today.  It hurt mainly because I have a blister on my heel from the super cute new heels that I bought last week, but my legs are somewhat sore too.  Three days in a row!  Pretty amazing for me!  Oh btw, thanks sweetheart for the new shoes!  :)

Does anyone knows any good work out suggestions for someone who is....ummm.....not at all skilled or athletic.  Right now I am doing the C25K, but I don't think I am cut out to be a runner.  No offense to anyone who likes it, but its BORING!  However it might be better if I wasn't in the garage staring at the walls, but it gets pretty hot outside!  So I am thankful for my cool garage. 

I am scheduled to work out again in the morning at 9 a.m. which is pretty darn early!  We will see how it goes!

It is funny where life takes you.  I never pictured my life being the way it is, but I definitely couldn't imagine it any other way!  I have so many things to be thankful for.  On December 28, 2009 I married my best friend!  On that day, I not only became a wife, I also became a step-mother! Being a step mother is very different than I thought it would be!  It is an emotional roller coaster. 

Taylor is an amazing 14 year old who truly amazes me!  She is a kid, so she is far from perfect, but she bounces back better than anyone I know.  She is crafty with her million hobbies that she has.  She also has the best grades that she has ever had right now!  So I am proud of her!  



Ethan is the most adorable 4 year old boy that you will ever see.  He is stubborn, just like his daddy, but he is such a good kid.  He loves any of the normal boy stuff, but more than any toy, he loves attention!  And I love giving it to him!  :)

I am so blessed to have Tim, Taylor, and Ethan in my life!  I have an amazing family and I love them so much!

I don't have the time...

Admit it, we all say this all the time!  I don't have the time to workout.  I don't have the time to go somewhere.  I firmly believe that you have the time for what you make the time for.  So today started my new schedule.  I have made a schedule for every day of the week that Taylor and I are going to attempt to follow.  Today was the first day that we used it.  Surprisingly, I got everything on the schedule done!  I wanted to skip some of the things like laundry and working out, but I didn't!  

In case you missed it earlier, I said that I worked out today!  LOL  That would officially make it two days in a row!  Everyday on my schedule I have workout time, so that is one of the biggest reasons I want to follow this schedule.  In addition to working out (which is huge for me) I also cleaned the whole house, including toilets and showers! 

"For every minute spent in organizing, an hour is earned."  I dont know who actually said this, but we are going to see if it works!  I will keep everyone posted......

My New Job & Hobby

I guess people who actually know me are wondering what I am doing!  I have decided that I need a hobby!  I probably should have tried to find this hobby when my wonderful husband first left for Afghanistan, but I don't generally do things in the order that I should!  I have an amazing husband, who for the moment is allowing me to be a housewife!  Some may think I am old fashioned, but I love the idea of being home!  I want nothing more than to have a strong family.  In the past I have had to work (generally nights) and my husband travels a lot with his job, and I feel as though I have missed out on so much precious time!  I am very excited about being able to have family dinners and to spend time together as a family!  However, I do find that I get bored some (I haven't quite figured out the most effective way to spend my time).  So I thought a blog would be a cool way to share my thoughts with friends and family. 

My husband will be leaving Afghanistan in 21 days!  So that means, I have three weeks to figure out how to be a good housewife!  I can't wait until he gets home!  I know he had R&R in December, but that was such a stressful time that neither of us really were able to relax!  So we are way overdue for some quality family time!  I know that I may not say this often enough, but I am very proud of how strong and brave my husband is.  Freedom doesn't come free, It comes from thousands of soldiers just like my husband, out there fighting everyday.  So Thank You Tim Akers!

I look forward to blogging more later! I plan on sharing all the good times and even the bad ones that I come across during this new job of mine!  I might even add some of the crazy things that catch my attention!  Hope you enjoy reading!  Have a great night everyone!
